Rodica Prato’s Guayaba

Photo by Winston Cole or me of Rodica sitting pretty with Roland and their son, Savinien reflected in the mirror.

You may remember that I recently wrote about the dinner my friends Ronald Caracostea, the best vegetarian home cook I know, and his wife Rodica Prato invited me to.  Rodi ca is a gifted illustrator whose work is in the National Gallery and illustrates books ranging from Garrrison Keilor to Martha Stewart,  Check her website out.

Every time we get together, Rodica commemorates the occasion by sending me sketch. This one shows me inside of a guayaba because I took them a roll of one of my all-time favorite Mexican sweets: rollo de guayaba.  This is guava paste spread thin and topped with cajeta or caramel filling, a specialty of Calvillo, Aguascalientes, where I visited my sister Marina and her family.

I got Roland to give me the recipe for the fabulous mushroom mousse that I will post in the Recipe section.
