Pesto de Hoja Santa
Puré de Hoja Santa
Hoja Santa Purée
This is not a traditional Mexican basic but it is the base for several dishes I make and will soon post. You can substitute cilantro or Italian parsley for the hoja santa.
i teaspoon salt
1-2 garlic cloves, peeled
1 jalapeño chile, coarsely chopped
3 large hoja santa leaves, torn into pieces
1/2 cup extra-virgin olive oil
Place the salt and garlic clove in the food processor and process until
ground. Add the chile and process until well combined, Add the hoja santa, a little at a time, and process until puréed. Add the olive oil in a thin stream.
