Mussels Margarita- Mejillones a la margarita
No, no one named Margarita gave me this recipe. It’s just me doing what I have criticized in others: Using none traditional combinations of ingredients, in this case white tequila, lime juice and orange juice instead of the triple sec that you would use to make a margarita to cook some mussels. They were so delicious and easy to make and light to boot.
2 tablespoons extra-virgin olive oil, or use butter or vegetable
2-3 garlic cloves, minced
I large shallot or 3 scallions, white part, finely chopped
1 pound mussels, soaked,w ashed and de-bearded, drained
1/4 cup tequila
Juice of 1/2 juice orange
Juice of 1/2 lime
Heat the oil or butter in a deep pot over medium-high heat; add garlic and shallot or green onion and cook, stirring or 2 minutes. Add the cilantro, stirring well to combine Add the mussels, tequila, and juices. Cover and cook or 3-5 minutes or until the mussels open. Serve immediately.
