It’s another scorcher in New York and all I want to eat are light and refreshing dishes that require little or no cooking. Here are some more favorites
Whenever I feel like spoiling myself, I go to my local fish store, Pisacane, and get a can of lump crabmeat to make one of my favorite Veracruzan dishes.

In the state of Michoacan, they serve this refreshing salad that for some unknown reason is called gaspacho de bienvenida. Bienvenida means welcome and it truly is a delicious way to start a meal.

I’ve posted this before but people love it so much that I am including this even though it does require a little bit of cooking but, since it is better the next day, you can roast the chiles in the evening when it’s cooler.

I love mussels because you can cook them in so many ways and it literally takes no more than 5 minutes once you soak them in salted water to remove any grit and unsightly beards. They are also very affordable.
